Ingredients
- 4 large eggs
- 2 turkey sausage links (sugar-free), diced
- 1 cup fresh spinach, chopped
- 2 tbsp coconut milk
- 1 tbsp olive oil
Instructions
- Preheat oven to 375F (190C).
- Heat olive oil in an oven-safe skillet over medium heat.
- Add diced turkey sausage, cook 3-4 minutes until browned.
- Add spinach, saute until wilted, about 1-2 minutes.
- Whisk eggs with coconut milk, pour over mixture.
- Bake 12-15 minutes until set and golden. Slice and serve.
