Ingredients

  • 1.5 lb beef chuck, cut into 1-inch pieces
  • 1 cup green olives, pitted and halved
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, undrained
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the beef chuck, salt, and pepper. Toss to coat the beef evenly.
  2. In a skillet, heat the olive oil over medium-high heat. Add the beef and brown on all sides, about 5 minutes.
  3. Transfer the browned beef to the slow cooker. Add the chopped onion, minced garlic, diced tomatoes, olives, oregano, cumin, and cinnamon.
  4. Stir all ingredients until well combined. Cook on low for 6 hours or until the beef is tender.
  5. Once cooked, check seasoning and adjust salt and pepper to taste.
  6. Serve warm with crusty bread or over couscous.
