Ingredients

  • 1 1/2 cups unsweetened almond milk
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated erythritol
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt

Instructions

  1. In a large bowl, whisk together the almond milk, cocoa powder, erythritol, egg yolks, vanilla extract, and sea salt until smooth.
  2. Pour the mixture into small ramekins or cups that will fit in your slow cooker.
  3. Add water to the slow cooker, filling it until it reaches halfway up the sides of the ramekins.
  4. Cover the slow cooker with its lid and set it on low heat. Cook for about 4 hours, or until the pots de creme are set.
  5. Once done, carefully remove the ramekins from the slow cooker and let them cool to room temperature.
  6. Chill in the refrigerator for at least 2 hours before serving.
