  • 2 large carrots, sliced
  • 2 medium potatoes, cubed
  • 1 can (14.5 oz) diced tomatoes, no salt added
  • 4 cups low-sodium beef broth
  • 1 tbsp olive oil
  • 1 tsp turmeric powder
  • 1 tsp black pepper

Instructions

  1. In a large Dutch oven, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic; sauté until the onion is translucent, about 5 minutes.
  3. Add the beef chuck cubes to the pot, browning them on all sides for about 8-10 minutes.
  4. Stir in the turmeric powder and black pepper, mixing well to coat the beef.
  5. Add the carrots, potatoes, diced tomatoes, and beef broth to the pot. Bring to a boil.
