Ingredients

  • 6 large eggs
  • 1 cup mushrooms, chopped
  • 1 teaspoon fresh thyme

Instructions

  1. Preheat your oven to 350°F (175°C). This will ensure your egg cups bake evenly and rise beautifully. A hot oven is key for proper baking.
  2. In a skillet, heat olive oil over medium heat, then add the chopped mushrooms. Cook until they soften, about 5 minutes, releasing their flavorful juices.
  3. In a bowl, whisk the eggs until well combined. Add fresh thyme and a pinch of salt for seasoning. This mixture forms the base of your egg cups.
  4. Add the sautéed mushrooms to the egg mixture and stir gently. Make sure to incorporate everything evenly so every bite is delicious.
