Spinach and Turkey Sausage Frittata

A hearty Paleo-friendly frittata with turkey sausage and fresh spinach. Just 5 ingredients, ready in 30 minutes.

Ingredients

  • 4 large eggs
  • 2 turkey sausage links (sugar-free), diced
  • 1 cup fresh spinach, chopped
  • 2 tbsp coconut milk
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375F (190C).
  2. Heat olive oil in an oven-safe skillet over medium heat.
  3. Add diced turkey sausage, cook 3-4 minutes until browned.
  4. Add spinach, saute until wilted, about 1-2 minutes.
  5. Whisk eggs with coconut milk, pour over mixture.
  6. Bake 12-15 minutes until set and golden. Slice and serve.
