Ingredients

  • 2 large eggs
  • 1 1/2 cups unsweetened almond milk
  • 1/4 cup erythritol sweetener
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. In a large bowl, whisk together the eggs, almond milk, erythritol sweetener, fresh lemon juice, lemon zest, vanilla extract, and salt until well combined.
